The Chhurpi Manufacturing Process:
The art of crafting Himalayan Yak Chews or Chhurpi, is a tradition passed down through generations. Our dedicated farmers, well-versed in this ancient process, ensure every chew meets the highest standards of quality and taste.
1. Milk Collection:
Fresh yak milk is collected through our direct relationships with over fifteen hundred farmers in northeast Nepal, ensuring purity and consistency.
2. Boiling and Butter Extraction:
The milk is boiled at 212°F for an hour, during which butter is extracted to remove all fat. This ensures a lean, nutritious base for the chews.
3. Coagulation:
Once cooled, whey is added to the milk to initiate coagulation, forming cheese. The whey is then discarded, and the cheese is separated.
4. Compression and Drying:
The cheese wrapped in burlap bags and compressed to remove moisture. It is then dried for 15-20 days to achieve its signature hard texture.
5. Smoking:
Finally, the chews are placed in a smoking chamber, infusing them with a smoky flavor that dogs adore.
